These beauties are made with WLDFLR Gluten-Free Pastry Flour and come out light, flaky, and impossibly tender every single time. Traditional biscuits get their rise from steam created by cold butter pockets between layers of flour. But the real secret here? Whipped heavy cream instead of butter. (Think about it: what is butter at its core? Overwhipped cream!) The result is a biscuit so delicate, so fluffy, that it can actually be more tender than a wheat biscuit. And I promise that no one will believe they're gluten-free!
