A pastry chef who can’t eat wheat…WHAT THE FRENCH BREAD, right?!

That was the joke I made to myself in 2009, right after I was diagnosed with celiac disease. It wasn't funny at the time, but how else would I cope?

I got the chance to sit down (well, type it out for) A Gluten Free Family and share the real story behind Verveine Cafe & Bakery and WLDFLR by Monica Glass: the decade of being dismissed by doctors, the collapse on the street that finally got me some answers, and the obsession that followed. That obsession eventually became my mission — creating gluten-free food so good that know one would ever know and building a space where everyone has a place at the table.

I talk about why I think gluten-free food still misses the mark (hint: it’s built defensively to avoid a problem, instead of offensively to be genuinely delicious), what running a niche food business for 2+ years has actually taught me, and why nobody at Verveine has to ask anymore.
