Spring is FINALLY here! Well kinda. At least in Boston we’ve been inching forwards with a few warm days peeking through intermittently between the odd cold and flurry-full days like this past weekend.

Ahhh, sunshine and warmth, you are near and I can almost feel it!

Serious question.

Does winter make you as lethargic and depressed as me? Here’s the thing: I love snow when I can ski and do fun outdoor activities. But for every day living, even as a nor-easterner by birth, I’ve come to terms that winter is not my season. I do truly appreciate each and every season, but the winter blues — or should we really call them grays because the sky ain’t blue — really affect me. So whenever I feel the sun shining just a little bit brighter, and the greens start to show, oh do I start to feel awakened within. I feel lighter and brighter and more alive. And with that comes the craving for fresh flavors and vibrant colors.

With the emergence of this color and life, I cannot contain my excitement to introduce new seasonal produce onto my menus. I also really want to start sharing more WLDFLR recipes with you, my incredible community. I figured that — since April is kind of the in-between up here — while we wait for the full bounty of spring produce to arrive, there’s still a way to infuse your baking with seasonal spirit. If you're anything like me, you love a sweet treat that not only tastes amazing but also looks as bright and joyful as the season itself. Enter: Matcha White Chocolate Cookies.

TIPS:

  • Let your eggs and butter come to room temperature before making the cookies. Using room temperature ingredients, especially butter and eggs, helps create a smoother, more cohesive dough, leading to better texture and a more even bake. It also helps trap air when creaming, contributing to a lighter, more airy texture. If you need to warm up your eggs in a pinch, just place the whole eggs in warm water for a few minutes before cracking!

  • I always recommend freezing your dough and baking from frozen for the best texture and flavor.

  • Since these cookies freeze well, they can be made in advance and baked whenever you’re in the mood for a fresh, warm cookie!

  • Use a large circular ring to make your cookies perfect rounds This is completely optional but if you want perfectly round cookies, use this tip! Immediately after taking your cookies out of the oven, use a circular cookie cutter or any round bowl that’s slightly larger than your cookies and swirl your cookies around inside the ring to knock any uneven edges into a perfect circle.
